In game it says you can delete zones by holding CTRL/Control, but this does nothing. I tried using walls, but this did nothing either. I feel this is a general question, but I can share my example if it helps. I feel that this is something that has been missing, especially if you get very far in a build and decide to change your mind on things.
Select the zone you want to delete, eg Staff Zone. Drag over the area you want to delete, but before you release the mouse button, hold control down. The area should turn yellow and a small yellow label ‘demolition tool’ appears. Then when you release the mouse button, the zone will disappear.
